Discover This Healthy Thai Salmon Fishcake Recipe

The Thai Salmon Fishcake Recipe With Sweet Chili Sauce

Definitely, you've already tried heaps of salmon recipes and other ways how to cook them but let me share you this one I've stumbled a couple of days ago. The lady chef is so full of ideas in cooking her Thai salmon fishcake recipe. She brings a completely new light to eating healthy.

While this awesome salmon fishcake recipe uses a sweet chilli sauce to make it even more tastier and more appetizing to eat, just be careful not to add too much of it and make it so spicy and HOTTT!!!

Anyways, let me give you the ingredients:

420g of tinned salmon
5 tbsps breadcrumbs
2 tsps red chilli paste or 2 red chillies (finely chopped)
2 spring onions (finely chopped)
1 egg (lightly beaten)
1 large bunch of fresh coriander (finely chopped)
2 cloves of garlic (finely chopped)

THE SALMON CROQUETTES

Ingredients:

15 oz canned salmon

1 egg
1/4 cup flour
1/4 cup potato flakes
1 small onion, grated
Black pepper
1 tsp. baking powder

Procedures:

Drain salmon, reserving 1/4 cup liquid. Remove skin and bones. Place salmon in mixing bowl, breaking up into smaller pieces. Add egg, mixing thoroughly. Stir in flour. Blend in potato flakes, onion and black pepper. Combine baking powder and reserved 1/4 cup liquid. Stir into salmon mixture until well combined. Form mixture into 24 croquettes.

Drop into deep hot oil and fry with out crowding for 3-5 minutes or until golden brown on all sides. Drain on pepper toweling. Garnish with dill and lemon wedges. *if mixture is not easy to shape, cover and chill for 30 to 40 minutes.

POACHED SALMON IN WINE CREAM SAUCE

POACHED SALMON IN WINE CREAM SAUCE

Ingredients:

2 tbl .butter
1 small onion (sliced coarsely)
1 carrot (sliced)
4 tsp. lemon juice
1 cup dry white wine
1 1/2 cups water
1 bay leaf
6 cloves
1/4 tsp. dried thyme leaf
1/2 tsp. salt
4 salmon steaks (1 inch thick)
1 tbl. butter
1 tbl. flour
2 tbl. dry white wine
1/2 tsp. lemon juice
1/2 cup whipped cream
seasoning

Directions:

Melt 2 tbl. butter in a large skillet. Saute the onions until tender. Stir in the carrot, 4 tsp. lemon juice, 1 cup white wine, water, bay leaf, cloves, thyme, and 1/2 tsp. salt. Bring to a boil. Reduce heat and simmer for 10 minutes. Add the salmon steaks to the skillet and poach gently until the fish begins to flake easily with a fork. Cover pan if liquid doesn't cover the steaks. Remove fillets to a hot platter. Strain and reserve 1/2 cup of the liquid the salmon was cooked in. Melt 1 tbl. of butter in a saucepan and gradually stir in 1 tbl. of flour. Cook while stirring for 1 minute.

Gradually stir in the reserved fish stock, 2 tbl. white wine, and 1/2 tsp. lemon juice, stirring until smooth. Simmer for 5 minutes stirring occasionally. Stir in the whipping cream and simmer until the sauce is thickened. Season and pour over the salmon steaks.

The Fabulous and Easy Teriyaki Salmon Recipe

TERIYAKI SALMON RECIPE

Ingredients:

4 salmon steaks (about 6 oz. each), skinned, or 1-1½ lbs fillet, skinned
1-1/4 cups soy sauce
1/3 cup sake (Japanese rice wine), Mirin (sweet Japanese cooking wine),
or sherry
6 tbl. sugar
3 garlic cloves, minced or pressed
1 Tbl. minced or grated ginger root
1/3 cup vegetable oil

Procedures:

Combine all the ingredients for the marinade in a small bowl and stir until the sugar dissolves.

To prepare the salmon, quickly rinse the salmon under cold running water and pat dry with paper towels. Divide each steak into 2 pieces by cutting along either side of the central bone and then discarding the bone; alternatively, cut the fillet
into 8 equal pieces. Place the salmon in a shallow glass or ceramic container and pour 1 cup of the marinade over the fish. Cover and refrigerate for 2 hours, turning the fish occasionally.

Let come to room temperature before cooking. Prepare grill. Remove the salmon from the marinade, reserving the marinade. Place the fish on an oiled grill . Position the fish 5 to 6 inches from the heat source, turning once and brushing with the reserved marinade several times, until the flesh is just opaque, 3 to 5 minutes per side, depending on thickness. Serve the salmon at once with reserved marinade as dipping sauce. Makes 4 servings

Smoked Salmon Recipe - The Alder Plank Smoked Salmon

ALDER PLANK SMOKED SALMON

Ingredients:

3 pounds salmon fillet
1 tbl.freshly ground black pepper
1/8 cup packed brown sugar
1 tbl. water

Procedures:

First thing to do is to soak the salmon fillet in a brine solution for at least 4 hours, but preferably overnight. Also, submerge the alder wood plank in water and place a heavy object on it to prevent it from floating.

Preheat an outdoor smoker for 160 to 180 degrees (70 to 80 degrees C). Remove the salmon from the brine, wash thoroughly under cold running water and pat the fish dry thoroughly with paper towels. Remove the wood plank from the water and lay the fish out on the plank. Season the fish with freshly ground black pepper to taste.

Smoke the salmon for at least 2 hours, checking after 1 1/2 hours for doneness. The fish is done when it flakes with a fork, but it should also not be too salty. As the fish smokes, the salt content reduces. Adjust the cooking time and salty flavor to your taste. (Note: Smoking a fillet can take 2 to 6 hours depending on your taste, the size of the fillet, and the fat content of the fish.)

During the last 30 minutes of smoking, combine the brown sugar with the water and mix well to form a pasty baste. Using a brush, apply this liberally to the salmon.

Easy Salmon Recipes - Curried Salmon Recipes

There are heaps of salmon recipes you can try cooking. Some are quite time consuming but there are also easy salmon recipes and that's what I'd like to share with you today. The curried salmon and curried salmon with fruit recipes.

CURRIED SALMON SALAD

Ingredients:

3/4 to 1 pound salmon steak or fillet
1 Tbl. fresh lemon juice
6 Tbl. mayonnaise
1 tsp. minced or grated fresh ginger
3/4 tsp. curry powder
2 cloves garlic, minced or pressed
1/2 red delicious apple, cored and diced
1/4 cup diced green bell pepper
3 Tbl. raisins
4 large crisp lettuce leaves

Cooking Instructions:

First is to preheat the broiler and brush the salmon evenly with 1 teaspoon of the
lemon juice. Then set on a lightly oiled baking sheet. Broil 2 to 3 inches from the heat until just opaque through, 7 to 10 minutes, turning steaks once. When cool enough to handle, remove and discard bones and skin. Cut the salmon into 3/4-inch pieces.

In a medium bowl, stir together the remaining lemon juice, mayonnaise, ginger, curry and garlic. Gently fold in the salmon, apple, bell pepper and raisins. Lay the lettuce leaves on individual plates and mound the salmon salad on top.


CURRIED SALMON WITH FRUIT

Ingredients:

1 cup white wine
4 green onions diagonally cut
1 bay leaf
1 tbl. butter
1-2 tsp. curry powder
2 ripe pears or apples, cored and sliced
1 red pepper, julienne cut
1 1/2 lbs. salmon fillets

Procedures:

In large, deep skillet, combine wine, green onions, bay leaf, butter and curry powder. Heat to boil. Add fruit and vegetables. Simmer 5-10 minutes or until tender-crisp. Remove fruit and vegetables onto platter and keep warm. Discard bay leaf.

Then add salmon to liquid in skillet and cover. Steam until fish flakes when
tested with fork. Place fish on serving platter over vegetables and fruit. Drizzle any remaining liquid over all. It makes 4-6 servings.

Tasty Recipes for Salmon - Italian Style

Today, let me share with you what my Italian workmate shared with me. Let me tell you, he's also a salmon lover like me. He's already cooked lots of salmon recipes in years but he just gave the copy of these two Italian recipes, his favorites.

Well, I've tried these recipes last weekend. One on Saturday and the other was on Sunday. The whole family loved it and I thought of sharing it here in my blog. Hope you'll enjoy these another great recipes for salmon.

SALMONE ALLA PERIGO (ITALIAN)

Ingredients:

Salmon, forcemeat of fish, truffles, butter, Madeira,
croutons of bread, crayfish tails, anchovy butter.

Procedures:

Cut a bit of salmon into well shaped fillets, and marinate them in lemon juice and a bunch of herbs for two hours, then wipe them, put a layer of forcemeat of fish over each, and decorate them with slices of truffle. When you put them into a well-buttered saute-pan with half a cup of stock and a glass of Madeira or Marsala, cover with buttered paper and put them into a moderate oven for twenty minutes. Afterwards, arrange the fillets in a circle on croutons of bread, garnish the centre with crayfish tails and with truffles cut into dice, with a quarter of a pint of Velute sauce, and half a teaspoonful of anchovy butter. Glaze the fillets and serve.

SALMONE ALLA GIARDINIERA

Ingredients:

Salmon, forcemeat of fish, vegetables, butter,
Bechamel, and Espagnole sauce.

Procedures:

Prepare the fillets as above, and put on each a layer of
white forcemeat of fish. Cook a macedoine of vegetables separately, and garnish each fillet with some of it, then cook them in a covered stewpan. Put a crouton of bread in an entree dish and garnish it with cooked peas, mixed with Bechamel sauce, stock, and butter. Around this place the fillets of fish, leaving the centre with the peas uncovered. Pour some rich Espagnole sauce round the fillets and serve.

A Cheap High-Protein Salmon Recipies - Salmon Salad

People who loves to eat salmon will find salmon salad a very agreeable dish. In addition to affording a means of varying the diet, this salad makes a comparatively cheap high-protein dish that is suitable for either supper or luncheon. Indeed another brilliant addition to your lists of salmon receipes and exciting easy ways how to cook your lovely and favorite salmon.

SALMON SALAD - 1

2 c. salmon
1 c. diced celery
1/4 c. diced Spanish onion
3 or 4 sweet pickles, chopped fine
French dressing
Salad dressing
Lettuce

Look the salmon over carefully, removing any skin and bones. Break into medium-sized pieces and mix carefully with the celery, onion, and chopped pickles. Marinate this with the French dressing, taking care not to break up the
salmon. Drain and serve with any desired salad dressing on salad plates garnished with lettuce.

SALMON SALAD -2

1 can salmon fish
1 cupful shredded cabbage or sliced celery

Drain the oil from the fish; remove the bone and bits of skin. Add the cabbage or celery, and Mayonnaise or Cream Salad Dressing. Arrange on lettuce and garnish as desired. If Cream Dressing is used with salmon, the oil drained from the salmon may be used for the fat of Cream Dressing. The salmon may be marinated before adding the other ingredients. When this is done, the salad dressing may be omitted. Salmon contains so much fat that it is not well to
add more oil after marinating.

Varieties of Easy Salmon Recipes

If you are running out of recipes for salmon and need more new ways how to cook your lovely salmon, you might want to check out these varieties of easy salmon recipes that your family will enjoy.

SALMON À LA CHAMBORD

Put a large middle cut of salmon into a saucepan with sliced carrots and onions, a bunch of parsley, two tablespoonfuls of butter and two cupfuls each of white wine and white stock. Season with salt and pepper-corns, cover, and simmer slowly for an hour. Take up the fish carefully and keep warm. Strain the liquid and thicken with flour cooked brown in butter. Add half a cupful of stewed and strained tomatoes, the juice of a lemon, two tablespoonfuls of butter, and a teaspoonful of anchovy essence. Pour over the fish and serve.

SALMON À L'ESPAGNOLE

Cut fresh salmon in small pieces suitable for serving, and fry in butter. Drain and keep warm. Add two tablespoonfuls of flour to the butter, in which the fish is cooked, and brown. Add two cupfuls of stock and cook until thick, stirring constantly. Take from the fire, add a tablespoonful of butter, a teaspoonful of minced parsley, and the juice of a lemon. Pour over the fish and serve.

SALMON À LA GENOISE

Boil a small fresh salmon in salted and acidulated water to cover, drain, and skin. Arrange on a serving-dish and keep warm. Chop fine a small slice of ham, a slice of carrot, a small stalk of celery, an onion, a parsley root, and three or four shallots. Add a sprig of thyme, a bay-leaf, a blade of mace, and two cloves. Fry in butter, add two tablespoonfuls of flour and cook until brown. Add two cupfuls of Claret and cook until thick, stirring constantly. Add half a cupful of beef stock, bring to the boil, and strain through a sieve. Reheat, add a tablespoonful of butter, and minced parsley, lemon-juice, grated nutmeg, and anchovy essence to season. Pour around the fish and serve.
