Smoked Salmon Recipe: Yummy Smoked Salmon Fettucine

Tasty Smoked Salmon Fettucine

Ingredients:

8 ounces dry linguine, fettuccine or spaghetti

6 ounces smoked salmon
2 green onions, thinly sliced
1 garlic clove, finely minced
1 tbl. butter or margarine
1 cup whipping cream
1 tbl. snipped fresh dill or 1 teaspoon dried dill weed
1 tsp. finely shredded lemon peel
Freshly ground pepper to taste
2 tbl. freshly grated Parmesan cheese
Freshly grated Parmesan cheese for accompaniment
Lemon wedges for accompaniment

Procedures:

First thing to do is to cook pasta according to package directions, preferably al dente (firm to the bite). Drain and it keep warm. Meanwhile, break the fresh salmon into chunks or cut the smoked salmon into thin bite-size strips; set aside.

For sauce,
cook the green onions and garlic in butter in a large skillet until tender. Stir in the whipping cream, fresh dill or dill weed, lemon peel and pepper. Bring to boiling; reduce heat. Boil gently about 5 minutes or until slightly thickened. Stir in salmon; heat through. Remove from heat. Gently stir in Parmesan cheese.

Finally, arrange pasta on individual plates or a large serving platter. Spoon the
sauce over the pasta. Pass the Parmesan cheese to sprinkle over individual servings along with the lemon wedges.

Baked Salmon in Sour Cream

It's been a while since my last sharing of my favorite salmon recipes. But now I'm back to my PC and also got some good and exciting salmon receipes for you guys. I don't know about you but baked salmon is one of my faves to cook on weekends. Actually I've cooked this recipe just last weekend and everyone in the family enjoyed it. Hope you do too:)

Ingredients:

2 pounds of salmon fillets
3/4 cup sour cream
salt and pepper to taste
1/3 cup mayonnaise
2 tbl. all-purpose flour
2 tbl. lemon juice
1/4 tsp. dill weed
paprika
8 oz. cream cheese
1 clove fresh garlic (pressed)
1/3 cup white wine

Procedures:

First preheat oven to 400 degrees then grease a 9x13" baking pan. Arrange the fillets in pan in a single layer. Blend sour cream, mayonnaise, flour, lemon juice, dill, cream cheese, garlic and wine with a whisk. Spread mixture over salmon fillets. Sprinkle with salt, pepper and paprika (to taste). Bake, uncovered for approximately 15 minutes or until fish flakes when checked with a fork.

This delicious baked salmon recipe makes about 4 servings. Apparently cook more if you've got a big family. Enjoy!
